This Arugula & Mushroom Rustic Pasta is a delightful combination of earthy mushrooms, peppery arugula, and savory Parmesan cheese, all brought together with garlic-infused olive oil. It's a quick and flavorful dish perfect for busy weeknights.
Ingredients:
- 8 oz pasta of your choice
- 2 cups arugula, washed and dried
- 1 cup sliced mushrooms such as cremini or button
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
Cook pasta according to package instructions until al dente
Drain and set aside, reserving 1/2 cup of pasta water
In a large skillet, heat olive oil over medium heat
Add minced garlic and saut until fragrant, about 1 minute
Add sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 5-7 minutes
Add cooked pasta to the skillet along with reserved pasta water
Toss well to combine
Stir in arugula and cook just until wilted, about 1-2 minutes
Remove from heat and sprinkle with grated Parmesan cheese
Season with salt and pepper to taste
Serve hot, garnished with additional Parmesan cheese if desired
