White Bean Salad with Pea Shoots and Grilled Bread



This White Bean Salad with Pea Shoots and Grilled Bread is a refreshing and hearty salad that's perfect for a light lunch or as a side dish. The combination of white beans, pea shoots, and grilled bread is complemented by a zesty lemon-garlic dressing. Optional feta cheese, basil, and parsley add extra flavor and freshness.

Ingredients:

  • 1 can 15 ounces white beans, drained and rinsed
  • 2 cups pea shoots
  • 2 slices of rustic bread
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese optional
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley

Instructions:

Preheat a grill or grill pan over medium-high heat

Brush the slices of bread with olive oil and grill until they are toasted and have grill marks, about 2-3 minutes per side

Remove from the grill and let cool slightly

Cut into bite-sized pieces

In a large bowl, combine the drained white beans and pea shoots

In a small bowl, whisk together the minced garlic, lemon juice, lemon zest, red wine vinegar, salt, and pepper

Drizzle the dressing over the white beans and pea shoots, tossing to coat

Add the grilled bread pieces and gently toss to combine

If desired, sprinkle with crumbled feta cheese, chopped basil, and chopped parsley
